CRANSTON, R.I. (WLNE) – Paco’s Tacos started out of a food truck eight years ago. The business eventually grew into a traditional restaurant which is now based in Cranston.
“We have a lot of followers and they’ve stuck with us,” said Frank Mapes, co-owner of Paco’s Tacos.
But then the coronavirus broke out and Governor Gina Raimondo banned dining-in at all restaurants to slow the spread of the virus and promote social distancing.
While Mapes understands the governor’s decision, it’s caused a slow down in customers at the restaurant.
“It’s tough across the board,” sad Joe Boisvert, co-owner of Paco’s Tacos.
To survive, Mapes and Boisvert are going back to where the started. They’re breaking out the food truck and relying on their mobile sales once again.
“It’s absolutely like riding a bike,” said Mapes. “We’re having as good a day as we normally would seven or eight years ago.”
The duo parked the truck outside the Regency Apartment Complex in Providence on Thursday, which drew up quite a crowd.
“They were lined up when we got here,” said Mapes.
Mapes and Boisvert plan on continuing with street sales until things are back to normal.
